In honor of Celiac Awareness Day I HAD to share with you this amazing recipe that was shared with me.
As Celiac's, and others who have to avoid gluten, you understand the excitement when you find a good cookie or cake. I mean, a GOOD one! Right? It's like finding the perfect shoe for your wedding (or prom if you're a little younger). For guys, umm, it's like watching a good game? Ha, sorry, I'm not so savvy in that department.
But, anyways, back to the cookie. When you can't have "normal" cookies, you've had to go through some awkward, if not awful, cookies looking for something yummy. And, due to that fact, your awesome friends (you know, those who understand) send you recipes when they find something gluten free that they think you might like.
So, this recipe today is for a gluten free AND vegan S'mores cookie! Doesn't that just sound divine! My lovely friend, Crystal, sent me the recipe and I can't WAIT to try to make them. Yes, I have not yet tried these cookies. But, I did look through the ingredients (and some delectable pictures) and I just couldn't wait to share with you. Having been quite sick the last few months (more on that later, but we don't have time now...HELLO, I'm about to give you a cookie recipe!) I'm not sure when I'll finally have the energy to whip up a batch of these.

Summer may be winding down as kids and teachers have gone back to school, but that doesn't mean the fun of summer has to be over.
Well, maybe a little. I mean, we can't just continue to stay home because we want to. :)
BUT, we can definitely still enjoy some of the great flavors as we sit by the pool or BBQ this weekend. Maybe even a little treat for yourselves tonight? I say, go for it!

The sleeping in for students (and us teachers) is coming to a close. :( It's a bittersweet time as I get excited to meet new students, yet sad to no longer be on my own schedule. While this summer has been different than others (more on that later) I still very much enjoy not having to pack breakfast, lunch and a few snacks.
Which brings me to today's post...
If your child is anything like me, they get really hungry throughout the day. That can prove especially difficult if they have food allergies. From slushies to gummy worms and Gatorade, while the snack selection at your child's school may have these gluten free options, it may not be what you want your child to eat. I can tell you, it's definitely not what your child's teacher wants them to be eating. A classroom full of 40 freshmen hyped up on sugar after lunch is definitely an interesting environment (not speaking from experience or anything). :)
However, healthy snacks are an essential way to keep your child's energy and attention up during the day.
So, here's a quick list of snacks that will hopefully help get you started and keep their tummies satisfied:
-Trail Mix (like the amazing one pictured above, from Trader Joes).
-Fresh fruit and veggies (I find it super helpful to bag these up ahead of time so they can just grab and go in the morning).
-Snack bars (NoGii kids or paleo bars and Larabars have some great, kid-friendly, flavors...I particularly love the pure ingredients of the Larabars).
-String cheese and pretzels (we love Glutino pretzels).
-Yogurt
-Applesauce
It's amazing, but although coming up with kid and school friendly snacks for your child with allergies can initially be a daunting task, once you start you may find that (like the short list above) there are quite a few options that will be similar to other kids.
It's never a quick, or easy, task coming up with foods to feed your child, but hopefully this list will help get the wheels in your head turning.
So, what did I miss? I know I didn't get ALL the good stuff!
One quick side note before I go. I heard a great idea awhile back from a mother whose son has Celiac. To help him feel more "normal" and included, she would talk with his teacher so she could keep track of when there were parties in his class. This way, when the occasion came up, she would make sure he had a cupcake or brownies in his lunch so that he never felt like he was being left out! He didn't have to just smell their dessert (am I the only one that does that?!?!), he could eat his own!

Going gluten free doesn't have to mean going without your favorite grilled cheese sandwich or French toast breakfast. You CAN have bread and it CAN taste good!
Gluten free just means a little tweak in your staple bread entrees.
However, depending on which bread you choose, you could find yourself thinking you'll never have a tasty sandwich again. Trust me, we've tried some pretty nasty gluten free breads over the past few years. But, we've also found some yummy options and have compiled a list for you of the top three brands (and no, none of these companies are endorsing this post; we just want you to eat what tastes good).
Top gluten free bread companies:
1. Canyon Bakehouse
Canyon Bakehouse has some of the most moist and squishy gluten free bread out there. We particularly like their cinnamon raisin and 7-grain breads. Perfect for a sandwich!
2. Rudi's Gluten Free
Rudi's is also quite moist for a gluten free bread. Their multigrain and cinnamon raisin breads are great for making toast in the morning. We also really like their plain tortillas
3. Udi's Gluten Free
Udi's bread holds a special place in my heart, just because it was the first gluten free bread I tried that tasted good and when toasted I didn't feel like it was going to break my jaw as I attempted to bite it. I also appreciated that it wasn't crazy crumbly like other breads (none of these three breads mentioned are!). Again, we like their whole grain, as well as their hamburger and hot dog buns. We also REALLY like their blueberry muffins. They're a great thing to pack (with Justin's peanut butter packets) for out of town trips!
Another great thing about Udi's is that Trader Joes is now carrying it!!! I think it's about $1 cheaper there than the health food store I usually buy it at! Score!
Now, granted, you can buy mixes and make your own gluten free bread, but honestly, we don't have time for that. When we're making something with bread (which we don't do every day) it's usually something quick like a sandwich or toast. Having these breads handy makes those quick meals that much tastier! Trust us, we've tried the funky stuff...it's gross! ;-)
One SUPER important note...we keep ALL our gluten free bread in the freezer so that it keeps longer and better. We just take off a slice or two and defrost in for 30 sec in the microwave or toast it in the toaster oven (just make sure you don't burn it!).

It's true.
Because the treatment for Celiac disease is to follow a gluten free diet, the IRS allows you to deduct those extra food expenses. It's a bit of a tricky process and requires consistency and follow through on your part.

Embarking on a gluten free journey can be a daunting adventure.
If you're like I was, you had SO many questions and didn't know where to start. That's what this post is for (thanks to the suggestion of a friend). :)
If you think you (or a family member) may have Celiac Disease, or even just gluten sensitivity, GET TESTED! This can save you a lot of time and frustration.
If the test comes back positive, breath. You, or your loved one, will be ok.
Find out what you can eat.
Eliminate what you can't eat.
Foods you CAN eat:
I'm just going to start here with a basic list (I don't want to get TOO crazy on you).
All fruits
All vegetables
Meats (unseasoned-seasoning is often where gluten can hide)
Dairy products (milk, yogurt, cheese)
Certain grains (gluten free oats, millet, teff, sorghum, quinoa, buckwheat)
Foods to be careful about:
Seasonings-Often anything "mixed," such as garlic salt, can contain gluten to prevent caking. I learned this one the hard way, after many months of unknowingly "poisoning" myself. Once I learned about the contamination, I promptly went out and bought garlic powder and salt. Now I just mix the two.
Dressings & Sauces-Again, you never know what could be added to these, so you always want to read the label, call the company, or talk to the restaurant manager to double check that something is safe.
Anything packaged-I know this is hard, really hard, but it's super important. There are so many products that may seem safe, but in reality that may contain gluten. Check that ice cream container, that frozen meal, and your lunch meat. Those are the top three packaged items that come to my mind that may be dangerous. I always check and double check labels just to be safe.
Foods to AVOID:
Wheat
Barley
Rye
Regular Oats (often processed in the same facility as wheat)
Bread
Cookies
Cakes
Cupcakes
Crackers
Any wheat/flour containing products
***If you're just starting out on a gluten free diet, again remember to breathe. This is a journey, and while it can often be frustrating, it will get easier.

Nothing like a baseball game on a warm summer day! This past Saturday we enjoyed a lovely game at Dodgers Stadium (well, Sunday's game would have been more lovely, since the Dodgers won!). We had perfect seats, reserved section behind home plate, and we were ready to enjoy some baseball.
For me, I was even more excited to enjoy a gluten free Dodger dog! I had heard that there was a complete gluten free cart complete with nachos, hot dogs, the works! I was so stoked to check this cart out!!
Much to my dismay, the cart was not what I was expecting. Turns out, there's a little store called the "marketplace" where you can purchase gluten free goodies.
Here's what I found.
While I think it's super awesome that they have a section with gluten free snacks, I was really disappointed to find that they weren't what you'd typically eat at a baseball game. No nachos, no hot dogs...
My suggestion would be to buy these snacks beforehand, at a much cheaper price, and bring them in with you. :)
One very cool thing though is that they serve gluten free beer here. So for those who like Redbridge, you can still have your peanuts and beer at a baseball game.
For the rest, make sure you eat ahead of time and bring your own snacks.
Luckily for me, we ate In-N-Out on the way and I brought water and a Larabar!

July Fourth is almost here, and I've been busy collecting some fun dessert recipes to share! Well, I don't know if "busy" is the correct term to use. Thanks to Pinterest, I've had a place to collect them all.

Here's what I'd do: slice bananas, wash blueberries & strawberries, remove strawberry stems, and then skewer fruit according to image. It looks like you'd need a small crate of blueberries, 1-2 small crates of strawberries, and two bananas. :)

Okay, well I should say this opinion comes from Crosby and me. And we can sometimes be a bit overdramatic. But, we like good food, so we may be worth listening to. :)
Here's the deal on NoOodle Noodles. They sound fabulous. Angel-hair noodles that are free from gluten, carbs and calories. They had me at the "angel-hair." But, then I was suspicious at the no carbs and calories. Totally one of those, "if it sounds too good to be true it probably is." Turns out these noodles are made from yam flour and water. Hmm...never heard of that before.
We were skeptics, but I was excited to go out to a nice italian restaurant, so a few months ago we tried these things (not quite sure how to refer to them?). We were in Santa Barbara enjoying a nice weekend away when I happened upon a cute italian place, Palazzio, that advertised offering gluten free noodles! Score! We called up where we were insured that not only did they have the gluten free noodles, but that they were these NoOodle noodles and guests seemed to enjoy them. We figured, why not.
Oh man! We had no idea what we were getting into.
Granted, I need to first say that the atmosphere and ALL the other food was exceptional! This place is really quaint (dark, romantic, wine vats to choose from around the restaurant). Best part, at 10pm everyone stops to sing "That's Amore" and drink wine!
For the food, we started with an amazing salad and bread (that I just smelled, but Crosby said it was heavenly, for all you non-Celiacs). I ended with a delicious decaf latte and rice pudding! Oh man, was that good!
The entree, however, was a bit different. Like I said, we ordered a pasta dish with NoOodle gluten free noodles. The dish came with chicken and sun dried tomatos, which we devoured. The pasta, however, not so much. It was really stringy with an odd taste and texture. We found that after trying to muster down a few bites (did I mention we had a MASSIVE serving sitting between us!), we both found ourselves gagging so we had to stop. Yes, it totally made us gag. We continued with eating a bit more of the chicken and tomatoes around the pasta and then had it packed up to go. I know, why get it to go? We felt bad. After a million questions from us, and then ordering a heaping serving, the least we could do was order it to go and then throw it away around the corner.
Can any of you relate? Or are we the only ones that have done that?
Anywho, all this to say, those NoOodle noodles were not our thing. I can't think of any other time in the past year or more that eating something has caused me to gag. Not even the funky green veggie juices I've been trying lately.
But then, that could just be us. I'm sure if they're selling, others must be eating them ok...just not us. :)
This one's candid...
I've been playing nurse the last few days as Crosby recovered from getting his wisdom teeth out. He took it like a champ, only needed a few Advil here and there. BUT, his stomach hated him! It was horrible! He's slowly feeling better, though, which is good. And, while he lost 4 pounds within the day after surgery, I have since fattened him up and he's gained 5! :) Hehe...lots of tomato soup, mashed potatoes, jello, pudding and ice cream!
Hopefully the worst is behind us.
Well, for his health, that is. I think my body secretly likes to maintain the role of "princess" because now we're rollin' back to my health. I went in to the doctor yesterday to find out the news on some tests I took, and OHH MAN!

Now we have some answers! Praise the Lord!
{UPDATE} In further looking at my tests, it appears that I have an uncommon form of yeast/fungi (not Candida and other known forms). Haha, you know what that means?!?! I'm a weirdo! hehe...this should be interesting. BUT...good update is that I don't think I'll have to follow the intense Candida diet (like the crazy Candida cleanse I found! Can I get another "Praise the Lord!?!?" :) Hmm...we'll see how this goes!
In looking at some causes, I wonder if the years of not being diagnosed with Celiac, thus being sick and stressed all the time are what did this? Hmm...
Anywho, this means my new journey, is to figure out a diet that is free of:

- Vitamin & amino acid levels show that my body makes little to no energy (shocker! ~sarcasm). :) Must take new vitamins ASAP!
- I'm apparently HIGHLY sensitive to eggs and should NOT be eating them (weird).
- I've got a few other food sensitivities (I'll need to recheck that list...probably will have to keep it in my purse...I think there's like 10 foods on there). Did I mention my body likes to be a "princess?!?!"
- Lastly, I have a HUGE yeast problem in my large intestine! Yowza! Ok, the Dr. paused before saying, "Well, I've seen worse..." We think she's lying! It's so bad that some treatment she would normally recommend won't work! Ahh... Now, she did send me away with Candistatin and I'll be going to another Dr (my current Doc is homeopathic) to get a prescription to help kill this beast!

I know we just posted a recipe on gluten free chicken burritos, but what can I say, we just can't get enough of burritos lately.
I think we're just so excited to have found tortillas that are pliable, tasty AND gluten free! It's a win, win for us!
This time, we made breakfast burritos for DINNER using Rudi's Gluten Free Fiesta Tortillas!
Breakfast Burritos
Ingredients
Directions:
1. Butter a medium size skillet and scramble your eggs (you'll want about 1 1/2 eggs per burrito).
2. In another skillet (I've found non stick works best for this, we have a cool "earth" pan that I use!), pour 2 Tbls. vegetable oil, and heat for 3-4 min. Add desired amount of hash browns (about 1/2 cup per burrito). Cook for 5 minutes, turn, and cook another five minutes.
3. While hash browns are cooking, slice ham and shred cheese.
4. Once all ingredients are ready, pop tortillas in the microwave for about 20 seconds, and then fill with eggs, hash browns, ham, cheese, and ketchup.
5. Fold up burrito (this is the exciting part! It folds!! Only one small tear in mine!) and enjoy!
Now, in writing this post I've realized that our breakfast burritos totally lacked veggies!! Oops...that's what we get for throwing them together as a quick dinner.

- Shredded Cheese
- Organic Ketchup (if desired)

Burritos. What's the first thought that comes to mind when you think "burrito?" For me, it takes me back to my pre-gluten free days, back to good 'ol Del Taco! :) Del Taco was a staple for me (especially during college) when I was in a hurry. Hello, who doesn't love a quick meal for a buck?!
But alas, my Del Taco burrito days are over (and probably for the better of my health!).
Once going gluten free, I soon discovered that making a gluten free burrito was not that easy. Having the options of only corn tortillas or brown rice tortillas, left me with a huge mess whenever I tried to roll them into a burrito. Can anyone relate?
Needless to say, we'd often just choose to make tacos (which we also love).
But now, thanks to our friends at Rudi's Gluten Free we have the option of pliable tortillas that are gluten free!
So, for this recipe, those are the tortillas we used.

Gluten Free Chicken Burritos
Ingredients:
- Rudi's Tortillas (we prefer plain or fiesta over the spinach)
- Costco's Rotisserie Chicken (great for when you're in a rush)
- 1 can Black Beans
- 1 Zucchini
- 1 tsp. garlic powder
- 1 tsp. onion powder
- 1 T olive oil
- Lettuce
- Shredded Cheese
- Salsa
- Take tortillas out of freezer and leave on counter to thaw.
- Shred chicken using a fork.
- Shred zucchini using a cheese grater (great way to disguise this veggie!).
- In a skillet, cook the zucchini in olive oil and season with garlic and onion powder (about 5 minutes).
- In a small sauce pan, heat the black beans until warm.
- Shred cheese.
- Chop lettuce.
- Put everything into tortillas and enjoy!
The great thing about making these burritos is how quick they are. I cooked the zucchini and black beans while Crosby picked up the chicken on his way home from work. Everything was done in about 15 minutes (if that).

Also, in honor of men, this post will be short and straight to the point! :) They are the hunters, after all, not the gatherers (shoot...already a tiny rabbit trail...this is going to be tough!). :)
First the products, then the company information (translation, men read the product list, then let your wives read all about the companies and their gfree policies!).
This is just a short list to get your started.

"We do not specifically test our products for the presence of gluten...gluten may be present in products that contain derivatives of wheat, oat, rye and barley.
In testing our products, our company follows the guidelines established by the International Nomenclature for Cosmetics Ingredients (INCI). Therefore, if we use an ingredient derived from a grain such as wheat, oat, rye and/or barley, those names will appear on the label."
So, there you go. If you're comfortable using this product, just check out the label, as the ingredients are CLEARLY labeled! Love that!
2. Bath and Body Works
This company (from what I understand) also clearly labels the sources of their ingredients (i.e., oat, wheat, barley, rye), so please make sure you read them carefully. The only ingredient that I've ever seen on any products I considered purchasing was "oats."
Also, I once heard that all body creams, body washes, and hand soaps are free of gluten-derived ingredients. BUT...that was what I read once on another blog, not information I heard from the company itself (it was about 2 years ago, so I'm guessing the company has changed how they worded their "gluten free" information, but not necessarily the ingredients).

This company offers much more natural products for both men and women. The ingredients of their products are also clearly labeled.

- It is also up to you if you'd prefer products that are clearly labeled gluten free (none of the above) or are just free of gluten derived ingredients (all of the above).
- Check product labels yourself to insure they're gluten free (what's gluten free today could, sadly, not be gluten free tomorrow as ingredients can easily change for any given product).

If so, you're well ahead of me! Until just a few weeks ago I had no idea. In fact, some friends brought one over months ago and I opted to eat something else due to not knowing if the chicken was safe!
Silly me!
Had I just looked closely at the label (note the word CLOSELY!) I would have seen that right across the bottom, in red, it clearly states that the chicken has no gluten! *Word of caution...as far as I know, this chicken is not tested for gluten. Just want to make sure you know all the facts!
In fact, when I discovered it was gluten free, I asked the rotisserie guy (wish I could come up with a more clever name for him!) whether the chicken was safe or not. He was so sweet and called corporate to find out. Sure enough, they directed him to the note on the label! Ha! I think we both felt pretty lame...but who cares, I now know I can safely eat this tasty chicken!
Our awesome rotisserie guy also walked me through the process the chicken goes through to assure me there should be no cross contamination. The chicken is completely prepared separately from anything else. It is stored separate, washed in a small room, seasoned, skewered and cooked (ALL in an area that ONLY the chicken is in)! Pretty cool, huh?
And while it's not organic (our preference when buying meat), when we're in need of a quick dinner, it poses a MUCH better option than fast food! And at less than $6 for a gigantic chicken, you'll be sure to get a few meals out of it.
Last time we bought it, we were smart and after shredding the entire chicken, we immediately threw half of it into the freezer for future meals. I'd say, for the two of us, we can get at least four meals out of one chicken! Bargain baby!!

Ok, here's the needed details to whip this up!
Ingredients:
1 cup Heavy Cream
1/4 cup Sugar
Organic Strawberries
Organic Blueberries
Crushed dark chocolate
Dark Chocolate
Fresh Mint (optional)
Directions:
1. Pour heavy cream and sugar into a bowl. Whisk until stiff peaks form. Whipped cream is done!
2. Wash all berries. Slice strawberries.
3. Put desired amount of blueberries and strawberries into separate bowls.
4. Crush dark chocolate and sprinkle onto the berries.
5. Cover with desired amount of whipped cream. Add fresh mint and serve!
Definitely a quick and easy dessert. And SO satisfying! Just looking at the picture and writing this out makes me want to whip it up again!

1. Pour heavy cream and sugar into a bowl. Whisk until stiff peaks form. Whipped cream is done!
2. Wash all berries. Slice strawberries.
3. Put desired amount of blueberries and strawberries into separate bowls.
4. Crush dark chocolate and sprinkle onto the berries.
5. Cover with desired amount of whipped cream. Add fresh mint and serve!
Definitely a quick and easy dessert. And SO satisfying! Just looking at the picture and writing this out makes me want to whip it up again!

I'm catching you up a little on the craziness of May for me, but most important I'm asking you some questions that I WOULD LOVE to have answers to. Okay, and here goes.
Celiac disease awareness month has ended and June is officially in full swing. There was so much I wanted to do on here last month (recipes, news tips, etc.), but I just didn't have the mental capacity or the time to do it. BUT...that does mean the summer should be poppin'!
So, here was the problem, Celiac disease awareness month comes at the worst time of year for me, a teacher. Actually no, the worst time of year would be August, but May is a close second.
I ran full force, at the start of this month, and then I just died. Man, did I die.
As the school year winds down things just get CRAZY! Everyone needs something: finals to be written and copied, students needing to make up work (sometimes for the first time all quarter! Ha!), students wanting to hang out during lunch because they love me (I know...I know..AWW!), plans for next year begin, and the list just continues. It's an odd thing, but every year as you wind down, you're still speeding up just to finish. I literally felt like I was almost jogging around campus getting everything checked in along with the necessary signatures (for you non teachers, this is things like teacher's editions checked into the library, grades checked in at the registrar, attendance checked in, keys checked in, classroom book sets checked in, club binders checked in at finance, etc.). Whew...exhausting, BUT now over! :)
Granted, I really enjoy teaching and I'm not complaining. I mean, hello, I've been getting all crazy to finish so that I'd be finished (and be done for 2 months! Whoop whoop!!)! I've definitely got a sweet gig, in that respect, but this last month just wiped me out.
That could be because a few things have been added to my usual May craziness. The main thing being that when I moved school four years ago, I just moved everything (and the moving that summer definitely became "in lieu of" organizing). That has left me with a TON of stuff to sort through, which I finally took on the last two weeks of May. Man, all I gotta say is kudos to those on the show Hoarders because I have been exhausted! Cleaning, organizing, tossing, reorganizing! It's so necessary, but it's just nuts!!
***Let me pause for a moment and say IF ANY OF YOU HAVE ORGANIZING TIPS PLEASE SHARE BELOW as our home office is next on my list! Paperwork may just be the death of me! ;)
So no, I'm not complaining here, just apologizing to all our wonderful readers. We want to be providing you consistent, up to date, info and I've just been sucking at the consistent part. I'm so sorry.

At least, that's the claim coming from Omission Beer.
Indeed, they do have quite the catchy title, but what's the truth behind this beer?
You see, Omission Beer contains barley & hops yet it's also deemed "gluten free." Hmm, how does that work? Well, according to the company, the beer goes through an extensive fermentation process that removes the gluten to where it's tested at 20ppm or below (what is required to label a product "gluten free"). In fact, as I was looking over their website I found an option under "test results" that allows you to find out how your specific bottle of beer tested. Kinda cool!
Here's a little more info about the masterminds behind this beer:
"Few people know more about gluten-free beer than Terry Michaelson and Joe Casey.
Michaelson, the chief executive of Craft Brew Alliance (A-B InBev owns a 32 percent stake in the group), was diagnosed with celiac disease 12 years ago. Casey, brewmaster at Widmer Bros., began formulating gluten-free beer recipes shortly after his wife was diagnosed with the disease in 2006.
"My wife missed the flavor of beer," Casey says. "She tried a wide variety of gluten-free beer, and they were missing what she described as beer character. It helped drive me to keep looking for a solution."
Michaelson says: "Joe deserves the credit for all the work he put into that — having a gluten-free beer that actually tastes like beer. I wanted to make sure if we did something, we delivered on the flavor that other beer consumers were experiencing and enjoying."
Omission will stick with its Pale Ale and Lager styles for now, but Michaelson says the line could expand.
"We want to continue to give people with gluten sensitivity the option to try different craft styles, which hasn't really been an option for them," he says. "The great thing about Omission is, you don't have to be a celiac to enjoy it."

We had the privilege of spending the day with my brother, his wife, and their three sons (the youngest is just 3 weeks old and is SO adorable!). It was such a great day! And what better way than to end a good day, but with a free meal?
Yep, even with a little newborn they invited us to stay for dinner! Man, was it tasty!
First, let me give you a little background about why my brother, David, and his wife, Jen, are so awesome when it comes to food. They're just awesome people in general, but when it comes to food, OH MAN, they rock! Everything, and I mean everything, we've ever had at their house has been delicious. They put the right amount of spices and they always manage to throw in veggies Crosby and I wouldn't normally eat, yet make it delicious! Plus they're growing a garden and they've got chickens...too cool! :)
Now, to their delicious chili...
Gluten Free Turkey Chili
Ingredients:

Super simple and simply scrumptious! Just writing this recipe makes me want to whip this up tonight! In fact, I think I just might.

Now, to their delicious chili...
Gluten Free Turkey Chili
Ingredients:
- 14 oz. can Crushed Tomatoes
- 1 lb. Ground Turkey
- 1 Tbs. Tomato Paste
- 1/2 bunch Green Onions (chopped)
- 1 can Kidney Beans
- 1 can Pinto Beans
- 1 can Black Beans
- 1 stalk (or 1/2 can) Corn
- 1 tsp. Ground Coriander
- 1 tsp. Oregano
- 1/2 tsp. Chili Powder (optional)
- 1 packet Taco Seasoning (optional)
- 14.5 oz. Chicken Broth (can sub Vegetable or Beef Broth)
Directions:
- Cook ground turkey until brown.
- While turkey is cooking, combine in a large pot the following: crushed tomatoes, tomato paste, kidney beans, pinto beans, black beans, chicken broth, and all seasonings. Cook on medium heat.
- Once turkey is cooked, add to the sauce and continue cooking. Add corn and green onions. Simmer another 5 minutes and serve.
Super simple and simply scrumptious! Just writing this recipe makes me want to whip this up tonight! In fact, I think I just might.

We all remember the buzz a few weeks ago surrounding Domino's new gluten free pizza. Some were excited, but many were up in arms about the potential cross-contamination. I was curious, but too afraid to try the pizza myself (the thought of "possibly" getting sick was just too much for me).
Well, our friends over at CeliAct, decided to put their curiousity into action. Find out what they did below:
"...we decided to use the nationally acclaimed laboratory that we use to test CeliAct for gluten. This time, we would test Domino’s gluten-free pizza.
Well, the results just came in and they are very, very interesting…
The Domino’s Gluten-Free Lab Test
Since we sell supplements specifically for people with celiac disease, making sure that our supplements are gluten-free is the most important step we take in producing CeliAct. For that reason, we use a lab that tests down to a sensitivity of 3 parts per million (ppm). To put that into context, the Gluten-Free Certification Organization (GFCO) tests down to a sensitivity of 10 ppm. World leading celiac experts, including Dr. Fasano, have suggested that the FDA use a threshold of 20 ppm to conclude that a food is gluten-free or not.
We decided that one pizza was not enough. To get more representative results, we tested Domino’s gluten-free pizzas from 3 different cities across the United States. Pizzas from New Orleans, Boston and Washington, DC were used for the test.
Once at the lab, each pizza was homogenized (think high-grade food processor) to ensure that the whole pizza was tested, and not just any small piece."

If you live in, or anywhere near, Bakersfield, CA, you have to check out these great ice cream places (if you don't...at least scroll down to check out the delectable pics). This town has really stepped it up with their gfree selections this last year or two, but OH man...their ice cream is where it's at! Bakersfield has gluten free ice cream that will make your mouth water!
Here's our top choices:
First up, Moo Creamery. If you have not eaten here, you are missing out. It might as well be called Gluten Free Moo Creamery because there are SO many awesome options for meals and desserts here. They are a local franchise and their stuff is to die for! We come here very often. Just ask our friends, they always laugh at how many of the employees know us! :) But for today, I'll just be highlighting their awesome ice cream.
The yummy goodness you see above is their mint chocolate chip ice cream. They use fresh mint in this treat and it rocks! Crosby and I often finish off our dinner with their ice cream (thus the two spoons!). *One SUPER important note: We always tell them I'm allergic to gluten and ask them to reclean the scoop with soap and water. We also ask them to scoop from a new place in the ice cream tub (sometimes they even pull out a fresh tub for us!). I've gotten sick here once...when I wasn't diligent about asking the above questions. It's so important people to ASK for what you need and as always, be super polite about it!!
Second is another local gem, Dewars. They've been around for decades and their stuff rocks as well! We went in a few months ago, very hopeful, but not knowing if there were any gluten free options. Turns out, the manager knew exactly what I could order! Crosby chose the red and white shake which has tons of strawberry & vanilla goodness, while I got their delicious peppermint ice cream. Needless to say, these were not "his and hers," but quickly became communal! I still can't decide which one I liked more. If you have not been to Dewars, you should go!
Lastly is a national favorite, Yogurtland. We go here quite often, just ask my hubby! :) Almost every Saturday for the last month I've asked if he wanted to go! Luckily (especially for my waistline), we haven't gone THAT often. However, it's next to a beautiful park, complete with a lake, benches, walking paths, etc. We love getting our yogurt then going to the lake and sitting on the grass to eat our yogurt.
Now, the goodness above is: strawberry, vanilla, dutch chocolate and red velvet cake. The toppings: strawberries, butterfinger, almonds, chocolate chips and m&ms. What I just love about this place is you can choose what you want and how much of it you want. Obviously I went for it on this one, but I've gone before and spent less than $2!
Added bonus to Yogurtland:
The nutrional facts (including GLUTEN FREE!) are clearly labeled next to the yogurt! Now, as far as toppings, I choose what is NOT near any gluten or has cookie crumbles spilled in it. I've even asked for fresh toppings from the back if there's something I want that either has been contaminated or is in front of a contaminant (ie cookie dough balls). The employees are always super accomodating. Just remember, be nice and polite and it usually helps! :)
